Beetroot Salad

If you are like me and having the same Caesar Salad with chicken isn't your thing, then try this Beetroot salad. It's super fresh, easy and you can added to your meal prep!  

Ingredients:

  • 1/2 Beetroot
  • 1 carrot 
  • 1/4 Cabbage

For dressing:

  • 2 Lemons
  • 2 tsp of olive oil
  • Salt and pepper

Method:

  1. Peel the beetroot and carrot. 
  2. Grate the cabbage, carrot and beet root and mix it all in a salad bowl.
  3. Mix the lemon with olive oil and add a pinch of salt and pepper. Add to the salad.

It goes well with grilled or baked chicken or boiled eggs. You can play with the amount of each vegetable and dressing.
