Chocolate Vegan Pancakes

I rarely have time to make anything complex for breakfast, so I tend to stick to my oatmeal as much as possible. It takes me 5 mins to make and most of the time, I make it in advance so I just take it to go. 

But although I am a creature of habit, and I like to eat the same everyday, I tend to mix it up here and there. I do this mainly for dinners, since I am home most of the time for it. But the long weekend and extra hours in my day, made me want to have something different. 

So after teaching my 7 and 8 Btone classes, I came home wanting to make pancakes with home made jam. 

I've post a similar recipe in the past, but I made a few changes in this one, and it made a world of difference! - this are by far the fluffiest vegan pancakes I've had and the yummiest ones!

We made a double batch, because let's be honest, if I am having pancakes for brunch, I am eating 5-6 not 2-3. I call it booty gains builders. 

Nutritional value is very similar to my morning oats, so my macros don't change much and I feel more satisfied. I might even start meal prepping them for the week. I wouldn't be upset if I have pancakes everyday of the week. Like who would????

INGREDIENTS:

  • 1 and 1/4 cups of flour* (I used oat flour)
  • 1 tsp baking powder
  • 1 and 1/4 cups almond milk
  • 1/2 ripe banana
  • 1 Tablespoon of caca powder. I used Choc Lover, from Your superfoods *
  • 2 tablespoons of maple syrup (optional)

Blueberry Jam

  • 1 cup of blueberries
  • 1/2 cup of water
  • 2 tablespoons of chia

INSTRUCTIONS:

In a bowl mix the Almond milk with the oat flour and baking powder, then add the banana and crush it with a fork. Mix well until there is no more banana pieces. You could also blend all the ingredients. Let it seat for 10 minutes. Super important! otherwise the mix will be watery and won't hold a pancake shape. 

While waiting, add the 1/2 cup of water in a saucepan and let boil. Once boiled, add the chia seeds and mix until they start expanding, then add the blueberries, mix and let boil one more time. Once boiling, bring the heat to low and crush the blueberries with a fork, until consistency desire. I like my jam a bit chunky but up to you. Mix well and turn off the heat. Let the jam seat for 5 mins or so, to let the chia seeds expand more to get the jam consistency. 

Now bring a non-stick pan to medium heat, or if you have a cast iron pan, use parchment paper on top so the pancakes don't get stuck. 

Use a 1/4 cup to scoop the mix into the pan. Let the pancake cook until golden before flipping around. It will cook like any other pancake, so you will see bubbles coming out (that is a good thing!)- flip for a few more minutes and repeat the process until the mix is finish. 

Serve the pancakes with maple syrup and the blueberry jam on top. 

 

* oat flour: I use my rolled oats to make the flour. Simply blend the oats for 2-3 minutes.
