BLACK BEAN + SHIITAKE MUSHROOMS QUESADILLAS

BLACK BEAN + SHIITAKE MUSHROOMS QUESADILLAS

INGREDIENTS:

  • 2 Corn Tortillas
  • 1/2 c shiitake mushrooms
  • 1/2 c cooked black beans
  • 1/4 diced onion
  • 1 garlic clove - minced
  • 1 tsp cumin
  • 1 tsp chipotle powder (optional - but you are Mexican, add more :p) 

HOW TO:

  1. Sauté onion and garlic in a pan on medium heat. 
  2. Add the shiitake mushrooms to the mix, and let cook for 3-4 minutes.
  3. Add the spices, and black beans.
  4. Here is the fun part, with a big spoon or the end of a mason jar, press the beans a few times until the beans become a bit pasty. Do as much as you want, or little as you'd like. The  idea is that you will have refried beans without the oil. 
  5. Heat the tortillas in a pan, or directly on the fire (if you are Mexican you know how!), and spread the mix on the tortillas. 
  6. Serve with avocado and cilantro. 
  7. ENJOY MAMACITAS! You are a true Mexican babe now. 

Sorry for the lack of words at the beginning, I just never read what other food bloggers say and go straight to the recipe, so if you are like me ..it is what it is. If you want some background on this recipe, let me know you...I was hungry and currently obsessed with mushrooms, and this happen. I don't know...recipes just happen in my head, and my Mexican side is always knocking the door, so here it is. YUM YUM.
