Carrot Cake Bliss Balls

When it comes to sweets, I know it can be hard to say no to cakes and donuts, and although I have nothing against them I like to have healthier options on my fridge. 

Bliss balls are my favorite way to snack, they are super easy to make and you can make tons of them at once, which make them perfect to meal prep. 

I have been trying different recipes, and adding different ingredients to them to see if I could sneak a few veggies, because we can't never have enough, right?



  • 1 cup of shredded carrot
  • 10 Medjool dates
  • 1/4 cup of raisins
  • 1 tbsp fresh ginger (finely minced)
  • 1/2 cup of shredded coconut
  • 1/2 cup chopped walnuts (you could also use almonds or pumpkin seeds)
  • 1 tbsp of cinnamon
  • water if needed
  • coconut for rolling 

How to:

Mix all ingredients in a food processor (if you have a vitamix, add the whole carrot first and spin until is shredded, then add the remaining ingredients). Make sure that the dates and walnuts are chopped up well. If mixture gets too wet, add more coconut and cinnamon. Form into balls, and roll each ball in coconut to evenly coat.

You can storage in them in the fridge up to a week, or freeze them up to a month.
