Chickpea Salad Sandwich

You know by now that I do not consume any dairy and meat products, but one thing I still do is making easy meals that I can meal prep for days. 

One of my favorite things to make on my lazy days, are sandwiches, peanut butter ones, avocado ones, and well now, I am obsessed with this chickpea sandwich. 

It is high on protein, for those who count macros or are worried being vegan will make you protein deficient (lil wiggle here). 



  • 1/2 cup of cooked chickpeas
  • 1/4 of red onion., finely chopped. 
  • 1 teaspoon of vegan mayonnaise or tahini
  • 1 teaspoon of Siracha
  • Pepper
  • 2 Ezekiel bread pieces of toast

How to:

Toast the bread and in the meantime, place the chickpeas in a bowl and smashed chickpeas with a fork until smooth. Then add the remaining ingredients and mix. 

Make your sandwich and enjoy! 

It also taste heavenly with cucumber slices, jalapeños and avocado.
