Since going vegan, I've had the hardest time succeding at the pancake recipe game. I did a recipe a while back, and although I still like it, it kept sticking to my pan and making so hard to make pancakes.
This time I found the best recipe ever! which makes me super excited and wanted to share with you. It is all vegan, you can make it gluten free and pretty easy to make.

Makes 6-7 pancakes.
- 1 and 1/4 cups of flour* (I used oat flour)
- 1 tsp baking powder
- 1 and 1/4 cups almond milk
- 1/2 ripe banana
- 2 crushed blocks of a chocolate bar (I used Dark chocolate from Alter Eco)
- 1 cup of blueberries
- 1/2 cup of water
- 1 tablespoon of chia
Heat a sauce pan and add the water and blueberries, let it boil for 4-5 minutes. Mix around and crush the blueberries a little bit. I like my jam super chunky, but you can crush as much as you like. Add the chia seeds, and mix around. Let it boil again for 2-3 minutes, turn off the heat and let sit.
In a bowl, mix your pancake ingredients. You could also blend it but I find it easy just to mash the banana and mix all the ingredients together. Let the mix sit for 5 minutes.
Bring the heat on a pan to medium to low heat.
Use a 1/4 cup to scoop the mix into the pan. Let the pancake cook until golden and then flip. It will make a few bubbles, and might stick a little bit if you aren't using a non-stick pan. But if you flip it when is gold, it will be super easy.
I like to make layers on my pancakes, so I put one pancake, then a layer on blueberry jam, pancake, and all over again. More jam on top and some maple syrup and you are ready to go!
