Mac and Cheese (VEGAN + Healthy)

Creamy, great consistency, and something you can have when you are craving comfort food that is actually healthy. Matt says Mac and cheese is kids foods ant that we shouldn't have it everyday, but don't let him stop you :p (jk babe)

Mac and Cheese (VEGAN + Healthy)

INGREDIENTS:

  • 2 medium white potatoes
  • 1 carrot
  • 1 white onion 
  • 1/2 cup cashews
  • 1/2 cup of veggie water 
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp of salt 
  • 2 tbsp nutritional yeast
  • whole grain pasta pack 

DIRECTIONS:

  1. Peel the potatoes, carrots and onion.  Dice the potatoes and carrots, and chop in half the onion. 

  2. On a pot, add enough water to cover 2-3 inches over the vegetables, let boil. Add the potatoes, carrots and onions, and let simmer for 10 mins. 
  3. Cook the pasta al dente on the side, every pasta is different but typically it takes 15 mins or so. Drain the past and set aside. 
  4. Remove the veggies and reserve 1/2 cup of the veggie water. 
  5. Blend the reserved water with the cooked potatoes, carrots, onions and remaining of ingredients. I use a Vitamix but any other blender should do the job. 
  6. On a bowl, add the pasta and pour the mix over it. 
  7. Enjoy! 

 

Notes: 

- You can add some tempeh bacon strips on top or mix with steamed broccoli and spinach.
