5 Ingredient Mexican Bowl

It is Thrursday night and fridge is almost empty, and is dinner time. You know, one of those nights that take out seems like the best option, but you are debating between savings and a chipotle bowl. That is me at the end of the week, or those nights were I can't be bother cooking a big meal. 

This Mexican bowl is perfect for those nights, it takes less than 15 mins (if you have everything cooked already) to put it together and it tastes pretty amazing. I have at least once a week and even my 12 year old sister said it was one of her favorites.

Serves 1

  • 1 cup of cooked rice*
  • 1 cup of black beans 
  • 1 cup of cooked corn
  • 1/2 chopped in cubes tomato
  • 1 sliced green onion

For the sauce:

  • 1/2 avocado
  • 1 tablespoon of chipotle sauce (optional)
  • 1/2 chopped cilantro
  • 1/2 juice of a lemon

How to and notes:

If you don't have cooked rice, is super easy. In a pot, bring 2 cups of water to boil. Once boiling, add one cup of uncooked rice, stir and let boil again. Once boiling, bring the fire low and cover the rice. Let cook for 40 mins. 

For the black beans and corn: you can buy one can of each, just drained it and they are ready to use. If you can also cook them from scratch, if you want to know how, let a comment below!

Ok, now that you have the rice, black beans and corn ready. Mix it with the tomatoes and onion in a bowl. 

In a food processor, mix the avocado, chipotle sauce, cilantro and lemon. Mix until smooth, it takes 2-4 minutes. 

Pour the sauce over the bowl with mix. and Voilá! 

You will have tons of leftover rice, just let cool down and refrigerate. You can use it during the week or to meal prep!
