Paprika Crunchy Chickpea Snack
As a huge snacker, I like to find a way to keep mines healthy and convenient as possible. I'm guilty of eating too many snack bars, and although most of them are made of organic and natural ingredients, it is still processed and don't think eating them as often it is great for our bodies.
I've been trying to find a way to make snacks that are easy to carry but also that are tasty. I will usually make bliss balls, because peanut butter and dates on the same meal are always a good idea ;) - however my salty side also needs some snacks and although I would eats everyday all day, they are not healthy and have to create my own crunchy snack version.
This snack is super easy to make, you barely have to do a thing!
I cook oil-less (is that even a word?) and salt free, so took me a few tries until I found a good way to make this chickpeas really good and make them last a week.
Try adding them to your salads for an extra crunch or simply carry them with you in your back.
We tend to leave them in the kitchen and snack on them while we cook dinner, or during the day if I am working from home.

- 1 cup of dry chickpeas
- 2-3 teaspoons of paprika
1. Soak the chickpeas in water overnight. The chickpeas will expand a lot, make sure to add 4 cups of water for them to have room to grow.
2. The next morning (or before you cook the chickpeas), rinse the chickpeas and place them on then put them on top of a baking tray. I use a baking sheet, so they don't get stuck.
3. Sprinkle the paprika on top the chickpeas.
4. Pre-heat oven to 400F/204C and back chickpeas for 40 minutes. Move them around after 20 mins or so.
AND READY! you can always different spices or not use anything at all.
They last up to a week, and I keep them in my cover, but you can also put them in the fridge.
